Recipe for Eggfree Easter Sweet Roll
Ingredients: 1 kg flour, 40 g fresh yeast, 200 g butter, 220 g sugar, 1 sachet vanilla sugar, a pinch of salt, half a teaspoon of turmeric, 500 ml soy milk, zest of 1 orange, 1 cup of rum, half a cup of raisins, 3 tablespoons of apple syrup
Preparation: Crumble the yeast in a small bowl, add half a teaspoon of sugar and 100 ml of warm soy milk. Leave in a warm place for about 15 minutes to rise and foam. Sift the flour, add sugar, vanilla sugar, salt, turmeric and orange peel. Add yeast, melted margarine and remaining warm milk. Knead the mixture well until the surface becomes smooth. Then put the dough into a floured bowl, cover with a cloth and leave to rise for at least 8-10 hours or overnight. Put the raisins to soften in some salted water. After the dough rises add drained raisins, divide into three equal parts and form balls. Put each piece separately on a piece of baking paper/sheet and let rise again. After a few hours make three deep cuts on the upper side, from the middle down in three directions, and bake in an oven heated to 180°C for about 45 minutes. When it is baked, pour apple syrup over it while it is still hot.
