Breaded Soy Medallions
Ingredients: 200 g soy medallions, semi-whole wheat flour, unsweetened soy or oats milk, oil, breadcrumbs, salt, soy sauce, mustard, garlic
Preparation: Boil soy medallions for ca. 15 minutes in salted water, drain well and let cool. Marinate the medallions overnight in soy sauce, mustard, garlic, and oil. Roll them in flour, then in a mixture of flour, vegetal milk, and salt (as for pancakes), and finally in breadcrumbs. Press the breadcrumbs to prevent the mixture from falling off while frying. Fry in hot oil on both sides, until golden brown. Serve with carrot and celery salad, or with French salad.
